Can I use the leg movement sensor to detect movement in other parts of the body?

Basically yes. Note that the sensor is in fact a flex sensor - You need to bend it at its center to produce a signal. It will certainly produce a signal for any movement, but we tailored its response for leg jerks, so it has lower sensitivity to slow movement. Some people are using it as a respiration effort sensor for infants.
