What is better- a Thermistor or a thermocouple?

Answer

Both sensors will produce a good signal. Often the system will dictate which is useable with it head-box. Both devices produce a signal in response to temperature changes, but while the Thermistor needs power from an interface cable or the system, thermocouples produce their own signal (which is therefore smaller).
